Swede
To make clapshot, peel then dice the swede, put into boiling water and simmer for a few minutes, then add peeled and chopped floury potatoes. Simmer for 20 to 30 minutes till just cooked. Drain, then mash with a potato masher, adding plenty of butter, seasoning and a grating of fresh nutmeg.
Swede is also great cooked, then roughly mashed together with carrots in a rather fab evocation of school dinners that seems to go down well with the whole family.
Finally, it’s the perfect weaning food for small babies.
